“Over here is where we’ll have a sandwich station,” said Bill the Butcher’s Rachael Gordon tonight on a tour of the new shop, “but first I have to find a baker I like.”
Those are the high standards of Edmonds’ own outpost of the Seattle-based meat chain, which held a small organic chicken-chopping demonstration on the eve of its official opening. The soft opening was Jan. 20, but tomorrow the Mayor will attend the grand opening and 4:30 p.m. ribbon cutting ceremony – with butchering knives instead of scissors, of course.
And expect specials for Valentine’s Day, along with a contest to find a heart with a message inside the store. Folks who submit a photo of the heart will be entered in a drawing, perhaps to win one of those organic chickens. Follow along on their website.
